Coco Banana Cake with Cashew Recipe

Me and my sister second attempt to bake. This time, its her favorite, Banana Cake. Well, this recipe i got from the internet is an Indonesian version because of the coconut added to the cake. It taste good, but this one is my least favorite so far. It was overcooked and it doesn’t look appetizing. But in fainess to our banana cake, my colleagues like it!

Ingredients

  •  3 eggs
  • 1 cup sugar
  • ¾ cup cream
  • 1 ½ cups flour
  • 4 lbs ripe bananas
  • 1 cup fresh cashews , coarsely chopped
  • 1 cup fresh coconut , grated

Preparation

1.Using an electric mixer on low , beat the eggs and sugar together.
2.when thick and pale add cream and mix for 1 minute more.
3.add sifted flour to the bowl and blend with a wooden spoon.
4.peel and mash bananas and add them to the nuts and coconut.
5.add mixture to the batter
6.mix until all the ingredients are blended, do not overmix.
7.grease 2 8 inch pans and bake at 350 f for 1 hour.
8.it will be golden brown when done.
